
Grain Free Pumpkin Spice Muffins
How early do you pull out your pumpkin spice ingredients? I definitely wait until the summer breeze has turned cool. These Grain free Pumpkin Spice Muffins are my favourite way to welcome the cooler fall days. I love to have these muffins on hand for a satisfiying snack or quick breakfast.

Muffin Ingredients
- 1 ½ cups blanched almond flour
 - ½ teaspoon kosher salt
 - ¾ teaspoon baking soda
 - 3 tsp pumpkin pie spice
 - 4 large eggs
 - ¾ cup canned pumpkin
 - ¼ cup coconut sugar
 - 1 teaspoon pure vanilla extract
 - ¼ cup granola to sprinkle on top
 
Step 1: Instructions for the Preparing the Muffin Tins
Preheat the oven to 350 degrees F. Place muffin liners in a muffin tray and spray with cooking spray.
Step 2: Instructions for Mixing the Muffins
In a large bowl, whisk together the almond flour, kosher salt, baking soda and pumpkin pie spice. Next add in eggs, pumpkin, coconut sugar, and vanilla. Stir until combined and smooth.
Step 3: Instructions for Scooping the Muffins
Evenly divide the batter between 12 muffins, filling them ¾ way full. Sprinkle each muffin top with a teaspoon of granola.
Step 4: Instructions for Baking the Muffins
Transfer to the preheated oven and bake until a toothpick inserted comes out clean, 18-20 minutes. Enjoy!
